I want to install to my building thermal storage with water tank and investigate the needed demand for 1 week autonomy on lt of waters and Joules how can I come to this results? in EnergyPlus of course

You could start with reading the "Plant Application Guide" located in the documentation folder of your E+ installation folder. The guide includes in it's second example a layout of both cold side and hot side thermal storage.
