I added several output variables measures in my OS model, but how can I retrieve those variables' data after simulation ?
Can I have them in a spreadsheet ?
There are a few answers that might be helpful if you look through the questions tagged with csv-file. I've been using DesignBuilder's Results Viewer for this purpose, which reads the ESO file, displays IP units, and allows exporting to CSV.
Bo - There is a measure that exports out all variables into a .csv file, but with a .dview extension so you can view it in DView.
The measure is available on the Unmet Hours Slack channel.
@aparker any plans to upload the DView measure to BCL?

If you just want one variable, use this BCL measure. This gets cumbersome for many variables.
